Delta Hexalactone is found in numerous dairy products (milk, butter, cream) but also tea, tobacco and even fruits like raspberry and strawberry. Olfactively, it's creamy, hay-like and coumarinic, with a lovely slight spiciness reminiscent of nutmeg sprinkled onto rice pudding. Being the smallest δ-lactone also comes with some perks, like increased volatility and an ability to impart a sweet gourmand nuttiness without being excessively fatty or stodgy.
